i think BLUEBERRIES were dancing around the minds of many yeasterday....

yesterday morning i spoke with my grandfather, he asked what i was making for breakfast...oatmeal with butter, brown sugar, cinnamon and milk...oh well we put blueberries in our oatmeal...blueberries grandpa...never tried that..
so always willing to try something new and tantalizing i pulled out a huge bag of frozen blueberries and into my oatmeal these bountiful blueberries went...wow, was all i could say...a new way of eating my oatmeal for now on...for the love of grandpa's...always there to share new insight!
as i continued eating this sweet oatmeal my mind wandered to the thought of cookies...can't help it as i love cooking and baking...
last night i pulled out good ol betty...oatmeal drop cookies recipe and decide to give it a whirl and recreate a new oatmeal cookie with blueberries...kind of scared but the process had already begun in my mind...
Blueberry Oatmeal Cookies~
Preheat oven 400 degrees
Bowl 1~
1/2 cup coconut oil
1 1/4 cup sugar
2 eggs
6 tbsp dark karo syrup (i ran out of molasses!?!)
Cream above ingrediants together till fluffy
Bowl 2~
Sift all ingrediants
1 3/4 cups flour
1 tsp baking soda
1 tsp kosher salt
1 tsp cinnamon
Add sifted dry ingrediants to bowl 1...mix till incoporated
2 cups quick cooking oats
Add to mixture...mix till incorporated
1 cup blueberries
Fold gently...they are fragile little pieces...they also do not stick completely in the mix...fear not..they will bake and become one with the cookie...
scoop 1 tbsp size on baking sheet
bake 8~10 mins...
cool & store in glass jar
i will be honest i think i immensely enjoyed eating the dough more than the cookie
my tummy was so full by the time the were ready i just had a nibble...
this morning i found them and thought why not...oatmeal blueberries sounds like a breakfast snack to me...next time i think i will try them in a bar shape...but i do have to say there is something about blueberries and oatmeal i am quite happy to have experienced!
